Tell us how many 5x7 or 8x10 good prints you want to be able to do in say 1/2/3 hours and we'll tell you how realistic your ambitions are :D
You will get faster and better but if you want to fine tune each print for the right colour balance then I'd caution against thinking that you can go into the darkroom and produce 36 good prints from a 36 frame cassette in say less than 3 hours including processing and drying. I'd make a note of each exposure time and filtration used as a minimum of documentation and use this to compare the print with each neg. This takes extra time but you will learn a lot.
Your speed of production compared to a mini-lab will be akin to that of a bicycle against a racing car IMHO
