Plate sizes appear to be approximately 2.5 x 3.5 inch - bit of an odd size, but it would be relatively straightforward to cut 4x5 sheet film to suit.
I'm not going to have time to start working on this for a week at least - where would be the recommended place to start? (i.e. shutter, body, etc.). I reckon that the film-holder modification would be last!

2.5 X 3.5 is a standard size - and one for which film is still available.
It isn't so far from 6 X 9 cm, so lends itself to a roll film holder quite well, you may be able to get one on eBay.
The shutter might be the hardest bit to get going... but the camera can't be used without it - so I'd start there, assuming you want to use it.
