For DIY, I would think converting a 6x7 enlarger would be easiest.
Instead of single mounts, use matte or carboard to hold a whole strip.
Then you can just slide them through.

I would not want to tinker with an expensive 6x6 projector.

You are right. I should not try to destroy an expensive 6x6 projector. I will continue to scan my 6x7 slides and run a slide show on the computer.
