FP100C questions
I've never shot instant film and I don't know how it works. However I can get at least ten boxes of FP100C color instant film for $15/box. I think this is pretty cheap--is it? That's not much more expensive than good B&W film, and I could use the film for proofing, I suppose. I understand that I need a special back to shoot it, though. I have a Speed Graphic with a Graflok back. Do I need a special Fuji back, or some kind of polaroid back? There are many different kinds of Polaroid back I have found.

You need a Fuji PA45 or Polariod 550 for shooting FB110C45 instant film. You can also with bleaching get out the negative also. 15 buck is damn cheap. i pay 10Euro for a pack. I use a HUGE amount of this for proofing, fun and porn

The Fuji 3x4 film packs (such as FP100C) are compatible with Polaroid 405 film backs that work fine on the Graflex. You can get one in good condition generally cheaper than the equivalent Fuji back.
