They may not represent how you meter, but they are perfectly viable approaches to metering even if the brief description here was missing a couple of caveats. You can read Zone, BTZS, WBM, any of the classics, and they describe that exact approach (spotmeter detailed shadows at -2) as a good starting point for B&W exposure. Similarly for chromes and their lack of a printing stage constraining one to (approx) +/-2 stops wherein the film will hold detail, so there are decisions, plans or lighting adjustments to be made in order to make the scene fit and look appropriate. But certainly not in any way incorrect or bad advice as such.
