The problem you may run into with Anza-Borrego is access. Many of the best places to shoot are difficult to get to without some serious hiking or the use of a 4X4 with plenty of ground clearance.
Jim's suggestion of the Salton Sea is a good one, with the added benefit that Salvation Mountain (http://www.salvationmountain.us/) isn't too far from there. You might also consider a drive to Palomar Observatory, Cuyumaca State Park or Mount Laguna.
If you're into street photography, a quick trolley ride can take you to the border crossing and gets you access to Tijuana, Mexico (busiest border crossing on the planet). The oft photographed Balboa Park is right near the heart of Downtown and has a really nifty cactus garden that many folks strangely ignore.
If you need E-6 processing, I believe that Chrome (http://chromedigital.com/e6.html) can do what you need.
